There are two varieties of apricot kernels, sweet and bitter. The sweet variety is extracted from sweet apricots whereas the bitter one mainly comes from wild apricots, with a slightly acid taste. Sweet apricot kernels can be used for snacking. Their flavour is sweet, not bitter and very soft on the palate. Bitter apricot kernels are generally considered as a food supplement and must be limited to 1 or 2 almonds a day, because of their high concentration of vitamin B17.
